VANCOUVER – June 2, 2017 – White Spot’s Culinary Training Center is now recognized as an ITA Designated Training Provider of Professional Cook 1, 2 and 3, encompassing all levels of the Red Seal program. White Spot is the first and only restaurant chain in Canada to offer this level of in-house training.
The Red Seal program is a nationally recognized symbol of quality, and the standardized certification for Canadian chefs formally acknowledging broad culinary knowledge and skill, and years of experience.
White Spot has been involved in the Red Seal program since 2006, and in 2008, with the support of Go2HR (BC’s tourism resource association) and the Industry Training Authority, White Spot began a two-year pilot program to deliver the first two levels of Professional Cook training required for Red Seal certification. The program featured a unique day release model, replacing the traditional model which requires apprentices to leave the workplace for a month at a time to take technical training.
In 2011, after a highly successful pilot, White Spot received its official training provider designation, and has been running classes every year since. In the fall of 2016, the company was granted provisional accreditation to teach a cohort of level 3 students, and in April of 2017, White Spot was granted official designation as a level 3 training provider.
Classes are held at White Spot’s state of the art culinary training centre in Vancouver, and see the program combine competency based assessment along with intensive hands-on instruction. Practical assessments, including third party evaluations, help maintain the integrity and high standards of the program. This year alone White Spot has 35 apprentices at various levels in the program, and over 200 graduates since the launch of the program.
White Spot’s Red Seal program is led and taught by Corporate Training Chef James Kennedy, a Certified Chef de Cuisine who just recently was inducted into the prestigious BC Restaurant Hall of Fame for his contribution to the industry.
